    – 1 cup white wine

    Instructions

    1. Preheat the oven to 200°C (390°F).
    2. Grate half of the cloves from one head of garlic and mix with chopped thyme, lemon zest, salt, and pepper.
    3. Place chicken parts in a baking dish, drizzle with lemon juice, and brush with the garlic-thyme mixture.
    4. Position the remaining heads of garlic around the chicken, brushed with the same mixture.
    5. Pour olive oil and white wine over the assembled dish.
    6. Roast for 20 minutes until golden, then cover with foil, reduce heat to 180°C (350°F), and cook 20-25 minutes longer, finally removing foil for a 5-minute finish for extra browning. Serve hot.
