Inside the Tishbi Experience
Arriving at Tishbi on a breezy June day, we dined outdoors next to a garden adorned with grapevine friezes under the comfort of a fan. Many patrons preferred the central area, shaded by tendrils of an old vine covering a wooden structure, creating a relaxing and inviting atmosphere.
Allowing our hosts to guide our meal, we began with several creatively presented starter dishes. The classic watermelon and feta combination was beautifully garnished with cherry tomatoes and greens (NIS 62). The coleslaw, served uniquely in a cabbage leaf, offered a sweet and light flavor (NIS 56). Our palette was further delighted with a visually striking salmon and beetroot paté, sprinkled with feta, served alongside crispy wholemeal bread.
A visit to Tishbi would be incomplete without sampling their wine. We broke our usual rules and indulged in their semi-dry rose, Cabernet Muscat, with vibrant fruity tones, chilled perfectly for a summer’s day (NIS 80 a bottle).
A highlight of our meal was the Aubergine Parmigiano, featuring richly flavored, fried eggplant topped with savory tomato sauce and melted cheese (NIS 62). Chef Gunther Biederman, having brought his culinary expertise from Austria and now fluent in Hebrew, graced us with his presence, filling our meal with a personal touch.
For our main course, we shared a specially smoked fresh salmon dish, complemented by buttered carrots, peas, an aromatic herb, potato croquettes, and a delicate Hollandaise sauce (NIS 135). The distinctive smoky flavor made the dish memorable.
No indulgent meal at Tishbi would be complete without dessert. We savored a delightful cheesecake paired with excellent cappuccinos (NIS 35), perfecting our dining experience.
Leaving Tishbi, we reaffirmed that this winery remains a top destination thanks to its inventive cuisine, top-tier service, stunning environment, and superb food offerings.
